More Restaurants Resist Indoor-Dining Bans as Restrictions Remain

States have stepped up enforcement of the rules, heightening the risk for restaurants

…Some independent restaurant operators say those offering indoor service against the rules could give the entire industry a bad name.

Michelle Durpetti, co-owner of veteran Chicago steakhouse Gene & Georgetti, said she has spent around $35,000 to outfit the restaurant for outdoor dining, and is frustrated by the many restaurants she sees in the suburbs still serving inside.

“I get why they are doing it,” Ms. Durpetti said. “But it’s not going to help restaurants in the long run.”…
